Meat:

  • 500g fillet of beef
  • 1 teaspoon olive oil
  • cracked salt & pepper

Salad:

  • 2 celery sticks, cut into thin strips
  • 1⁄2 cucumber peeled, deseeded and cut into thin strips
  • 1 mango cut into thin strips
  • a handful of bean shoots
  • cracked salt & pepper
  • 1 teaspoon olive oil
  • 1 red onion, diced
  • handful of crushed cashews

Dressing:

  • 2 garlic cloves,
  • 1 red chilli crushed
  • hand full of ripped coriander
  • juice of 2 limes
  • 2 teaspoons finely chopped ginger
  • 2 tablespoons chicken stock
  • cracked salt & pepper

Method

  1. Heat a griddle pan until white hot.
  2. Rub the beef fillet with the olive oil and a small pinch of salt and pepper and grill until medium-rare, about 2–3 minutes on each side. Let stand while you prepare the salad.
  3. In a large bowl, toss all the salad ingredients together with the salt, pepper, lime juice and olive oil. Transfer to a serving plate.
  4. Thinly slice the beef and lay on top of the salad mound. Top with the red onion and crushed cashews.
  5. To make the dressing, mix the garlic and chilli to a paste then mix in the remaining ingredients. Pour over the meat and salad and serve.
