Meat:
- 500g fillet of beef
- 1 teaspoon olive oil
- cracked salt & pepper
Salad:
- 2 celery sticks, cut into thin strips
- 1⁄2 cucumber peeled, deseeded and cut into thin strips
- 1 mango cut into thin strips
- a handful of bean shoots
- cracked salt & pepper
- 1 teaspoon olive oil
- 1 red onion, diced
- handful of crushed cashews
Dressing:
- 2 garlic cloves,
- 1 red chilli crushed
- hand full of ripped coriander
- juice of 2 limes
- 2 teaspoons finely chopped ginger
- 2 tablespoons chicken stock
- cracked salt & pepper
Method
- Heat a griddle pan until white hot.
- Rub the beef fillet with the olive oil and a small pinch of salt and pepper and grill until medium-rare, about 2–3 minutes on each side. Let stand while you prepare the salad.
- In a large bowl, toss all the salad ingredients together with the salt, pepper, lime juice and olive oil. Transfer to a serving plate.
- Thinly slice the beef and lay on top of the salad mound. Top with the red onion and crushed cashews.
- To make the dressing, mix the garlic and chilli to a paste then mix in the remaining ingredients. Pour over the meat and salad and serve.
